I am the biggest pistachio fan! In ice-cream, macarons, pancakes, patisserie, oats…you name it! I love the nutty intense flavor of pistachio and I can use it in pretty much anything.
These pistachio overnight oats are no exception and they make for the perfect breakfast. If you’re looking for a delicious, healthy breakfast that’s quick to prepare, these Pistachio Overnight Oats are the perfect choice. Creamy rolled oats are combined with protein-rich soy yogurt, plant based milk, and the rich, nutty flavor of pistachios to create an easy overnight oats recipe. These pistachio overnight oats are topped with vegan pistachio cream, plant based jogurt and crunchy pistachios.

Well…the main reason being that this recipe is so damn delicious 😉 but also because they are packed with a lot of healthy benefits such as soluble fiber (oats), healthy fats (pistachios) and proteins (milk/jogurt).
This breakfast or snack will keep you with sustainable energy throughout the morning or afternoon.
They are as we know very quick and easy to make and the versatility of making different flavors is just immense.
So you can switch it up according to your dietary needs or taste preference. In the summer I like to add a variety of fruits and berries and in the Winter/Fall I like to have more warm flavors with spices for example a baked apple cinnamon overnight oats.
Ingredients you’ll need to make pistachio overnight oats:
For overnight oats:
Oats: I use thin rolled oats for this recipe
Plant based milk: you can use any plant based milk for this recipe that your prefer. I’m using Alpro oat milk) as it has neutral and creamy flavor
Plant based Jogurt: I like to use soy jogurt for this recipe as it is high in protein and neutral in flavor. But feel free to use any Jogurt that you like. I also add some extra on top before serving
Pistachio paste: yous 100% pistachio paste for the best flavor. I use pistachio paste from Koro.de (truly the best and very good price/quality)
Chia seeds: any chia seeds will work
Maple sirup: just to add some sweetness. You can alternatively use gave for example and substitute it 1:1
Vanilla: make sure to use a good quality vanilla. I used vanilla powder (from Vanilla Dream) in this recipe as it’s easier to mix in
Salt: use regular table salt
Pistachios: chopped pistachios on top for extra crunch
For the pistachio whipped cream (optional):
Pistachio paste: you 100% pistachio paste (i use the one from Koro.de)
Plant based whipping cream : I use Oatly or Flora whipping cream, both work great
How to make pistachio overnight oats (step-by-step)
1. Make the overnight oats:
1. Hand blend the plant based milk and the pistachio paste until evenly combined. This just helps the pistachio paste distribute more evenly in the overnight oats. You can also just whisk it by hand until combined, but it won’t dissolve as easily as when you blend it.
2. Mix the rest of the ingredients in a bowl and add in the pistachio milk. Mix together until evenly combined.
3. Cover the overnight oats with cling film and let it set overnight in the fridge. You can also potion it into jars or place it in a large container.
2. Make the pistachio jogurt:
1. Mix the plant based Jogurt with the pistachio paste until evenly combined. Add a layer on top of your overnight oats. (This is optional, you can also serve the overnight oats on its own or with plain Jogurt) adding the pistachio paste just give you a nuttier flavor.
3. Make the pistachio cream: (optional)
1. Whisk the plant based whipping cream with the pistachio paste until semi firm peaks. Add a layer on top of your overnight oats. Sprinkle with some chopped pistachios and enjoy.
2. Adding the pistachio cream makes the overnight oats feel more like a dessert and a bit more indulgent. You can simply leave it out if you wish.
Tips for making pistachio overnight oats:
Pistachio paste: to get the best and intense pistachio flavor use 100% pistachio paste and not pistachio cream. My favorite pistachio paste is the one from koro.de
Use rolled oats: they soak up the liquids better and result in a creamier texture
Roast the pistachios: for the crunchy pistachios o top, give them a roast in the oven to intensify their nutty flavor
Serving ideas:
I like to serve these overnight oats in individual portions in small jars or glasses. It’s easy for meal prep and easy to take with you. You can serve it with or without the Jogurt and the pistachio cream topping. You can simply prinkles some chopped pistachios on top for crunch.

Yes. These pistachio overnight oats are vegan. You can substitute the plantbased milk for regular milk or the plantbased Jogurt for one made with cow’s milk if you prefer to make this recipe non-vegan.
Which pistachio paste should I use?
Use a pistachio paste that is made of 100% pistachios for the best flavor. You don’t want to use pistachio cream because they don’t have enough pistachio flavor to powder through the other ingredients and also pistachio cream has a high sugar content. So pure pistachio paste will give you best flavor and also the natural green color.
How long do these pistachio overnight oats last in the fridge?
I recommend storing the pistachio overnight oats no longer than 3-4 days in the fridge. For the best texture and flavor, enjoy them within the first few days after preparing them. The longer you store them the more the texture will change and they will start to get thicken in consistency and they won’t be as creamy anymore.
The Recipe
Makes 2 portions about 400g/each
Overnight oats:
320g plant based milk (I used Alpro Oat milk)
40g pistachio paste
120g fine oats
1.5g salt
1g vanilla powder or vanilla paste
10g chia seeds
30g maple sirup
80g jogurt, Alpro Vanilla skyr style (any other Jogurt will also work)
Pistachio whipped cream:
50g plant based whipping cream (for example oatly)
1 Tbsp pistachio paste ( for example KORO)
Toppings:
Jogurt of choice ( for example Alpro soy, coconut or oat jogurt)
Pistachio whipped cream (optional)
Crunchy chopped pistachios
Instructions:
1. In a small blender mix together the plant based milk, pistachio paste until smooth and well combined.
2. In another bowl add all the remaining ingredients ( except for the toppings) and mix in the pistachio milk. Mix everything until evenly combined. Store it in a tupperware in the fridge overnight and serve the next day.
Keep in mind that you may have to add a small amount of liquid if you are using thick or larger oats as they absorb more liquid that the fine ones.
3. Top the overnight oats with jogurt and lightly whipped pistachio whipped cream as well as crunchy pistachios.
4. For the pistachio whipped cream whip plant based whipping cream such as Oatly until slightly firm peaks. Add the pistachio paste and whip until evenly mixed.
The overnight oats can be kept in the fridge for up to 2-3 days.
