I’m Laura the creative person behind NIEMI.

I’m a professional pastry chef, with Finnish and German roots currently based in Zürich, Switzerland with over 15+ years of experience working across bakeries, patisseries, hotels and professional kitchens. Throughout my career, I’ve had the opportunity to work with a wide range of styles, techniques and flavors as well as with some very talented people that have inspired me and shaped my passion for pastry.

Baking has always been my biggest passion. What I love about it is that it combines creativity, flavor and precision. I love everything from elegant desserts, chocolate pralines,  to simple everyday bakes and everything in between.

I wanted to create this space for the enthusiastic home baker as well as the professional pastry chef or anyone in between who simply want to try new recipes,  improve their skills, learn tips and tricks.

Here you will find a mix of simple, approachable recipes as well as elevated professional recipes. I share the tips, tricks and techniques I’ve learned over the years in the industry. I hope these recipes inspire you to create, learn, and enjoy the process of baking as much as I do.
